CARBONARA!

I don’t know if you have ever heard about this italian delucious dish. If you have, you are a happy person, if you haven’t, i will help you to find true happiness. Carbonara is just perfect: four ingredients, four different tastes and a glorius look. You can’t ask anything else from a dinner. It’s by far the easiest dish to cook but the one where people make too much mistakes.

Four ingredients: pasta, guanciale, pecorino and eggs. Nothing more, nothing less. And even the prepation is easy: cook the pasta, brown the guanciale, take the eggs yolk and grate the pecorino. Once the pasta is cooked, take a dish, mix it together and enjoy!

What can go possibly wrong? Well, apparently a lot, looking all the culinary crimes i have seen, i’m seeing and will probably see.

First crime: there’s no vegan version. Sorry, but what you read in internet is false. You can replicate the look, but not the taste. There’s nothing you can use to replace the guanciale and eggs. There’s no vegetable or fruit that can replace the strucure, the consistency of eggs and Guanciale. Nothing. I’m sorry, but it is what it is. If you want to eat carbonara, you have to eat a dead animal and two products that come from animal like eggs and cheese.

The second huge, galactic mistake is to use the liquid cream. Hell is waiting for you, if you use it. You can’t just pour cream on a masterpiece like Carbonara. You just can’t. It’s like sandal with socks, hot beer and cold Pizza, United States without guns. It’s something you just don’t do. Please, use the cream for something else, but not over a Carbonara. Don’t destroy perfection with a blasphemy.

Last, but not the least, Guanciale and Pecorino. Now, here there are a two differents way of thoughts: the traditional one, that tells to follow the very recepy no matter what, the there are the other where people use Pancetta (not Bacon) and Parmigiano instead of Pecorino. I tried both versions in my life and that’s my opinion: they are impossible to compair, because you have two different ingredients and tastes. I tell you this: if you live in Rome, follow the rules, because you can find the ingredient pretty easily; if you can’t find gianciale, because it’s not so a common food to buy outside Rome, you can use pancetta. It’s not the same, i know, but we are still talking about something comes from a pig. There’s a difference, i know, but you are not so much far away from the traditional recepy.
